Microbiological evaluation of ready to eat product of Horina (Metapenaeus Monoceros) shrimp at a sea food industry of Bangladesh

Microbiological quality assessment is a crucial part of sea food processing industries. The companies must safeguard the and safety their products for consumers. study was carried out to assess microbial load (total bacterial load- total coliforms, fecal Salmonella spp, Vibrio cholera) ready-to-eat exportable Horina shrimp (Metapenaeus Monoceros) processed in industry Bangladesh. For analyses, samples were collected from cooked IQF (Individual Quick Freezer) BF (Block Frozen) shrimp. Microbial analysis conducted using standard protocol counting identifying microorganisms. Total four (Br. CPBF, Br. Cooked & peeled BF, Hr. PUD IQF, CP&D BF) 0.059×105cfu/g, 0,054×105cfu/g, 0.069×105cfu/g, respectively. coliform shrimps < 3 MPN/g. Escherichia coli, V. cholera totally absent products. data demonstrated that all values under limit ICMSF recommended microbiological might be because maintaining possible critical control (CCPs) point (HACCP) system. result present implies product Bangladesh excellent export, posed no risk human health.
